This sauce is a thick and smokey, but bright hot sauce to be used whenever you would use a hot sauce.

The brewing of this sauce includes whole Key
Limes and a generous amount of Coriander (the
seed of the Cilantro Plant) which gives a distinctly
bright flavor to thesmokey roasted Serrano and
Habanero peppers. A few drops of this thick sauce adds a great smokey addition of heat to salsas and guacamoles; eggs and omelettes; fish and shellfish; poultry and meats; vegetables; soups and stews.. It’s a great addition to dippingsauces and salad dressings of all kinds.

Pecan wood is used for the smoking of the
peppers and in aging the White Balsamic
vinegar yielding a unique smokey flavor!

Seafood Ceviche--hotter
1 pound seafood of chioce
1/2 cup lime fresh lime juice
1/2 cup finely diced red onion
1/2 cup finely diced red bell pepper
1/2 cup quartered cherry tomatoes
1/4 cup finely julienned basil or mint
1/4 cup finely julienned cilantro
1/2 tsp. salt
1/2 tsp. pepper
Green Serrano Habanero and Lime Hot Sauce to taste
Salt the tomatoes in a bowl for 15 min. and drain the expelled liquid. Dice your seafood into 1/2 inch pieces (firm fleshed fish, shrimp, scallops, squid, etc or a combo) and cover it with the lime juice in a non-reactive bowl. Let it marinate until it has “cooked” to your taste. The more opaque the flesh the more it has cooked. Mix in the other ingredients and season to taste.
